This recipe is protein rich and slightly sweet, thanks to the natural peanut butter in combination with allergen-free chocolate chips and raw honey. Enjoy a few as a quick snack, an after-dinner treat or bring them to share at your next gathering. They’re sure to be a hit!
Sweet ‘n Satisfying Protein Balls
Makes: About 45 balls
3 cups organic sprouted rolled oats
2 Tbsp chia seeds
1 cup allergen-free mini semi-sweet chocolate chips
1 cup organic natural creamy peanut butter
2/3 cup organic raw honey
2 tsp vanilla
- In a large bowl, combine ingredients. Stir.
- Line a 9×13 rimmed pan with wax paper. Scoop mixture into pan and pat with the edge of a spatula to spread out. Place in fridge to chill for 30-60 minutes.
- Once chilled, remove from fridge and roll into 1-inch balls. Place in an airtight container and store in the fridge until ready to enjoy!
Recipe notes:
- Depending on the consistency of your protein ball mixture, you may be able to roll into balls without chilling first. You’ll know by the stickiness of your fingers!
- These balls can be enjoyed at room temperature, chilled or even frozen!
- When made with the ingredients listed, this recipe is gluten-free and dairy-free.
- Tailor this recipe to your taste by swapping in chopped nuts or crushed coconut flakes instead of the chocolate chips. (You may need to add extra peanut butter if the mixture seems dry or crumbly.)
- Finding a clean peanut butter can be tricky. Check the ingredients list to make sure it contains only two ingredients (at most): organic peanuts and salt. I buy the Kirkland brand at Costco but if you don’t have a membership, Trader Joe’s carries a good option too!
