Slow Cooker Chicken Marinara

Simple. Easy. Hands-off. This delicious and nutritious slow cooker recipe is made of REAL food ingredients . . . and it’s REAL quick to put together too! Add a side of steamed veggies or a fresh salad for a complete meal your entire family will love. 

INGREDIENTS

3 large organic boneless skinless chicken breasts

1 24-ounce jar organic marinara sauce*

2 tsp dried basil

½ tsp dried oregano

1 ½ tsp onion powder

1 tsp garlic powder

1 tsp salt

½ cup freshly grated mozzarella cheese**

½ cup freshly grated parmesan cheese**

DIRECTIONS

  1. Place chicken in slow cooker and cook on high for 3-4 hours or low for 6-8 hours. When chicken reaches 165 F, drain juices and return chicken to slow cooker. 
  2. In a small bowl, combine marinara sauce and spices, stir, then pour over chicken. Top with mozzarella and parmesan. Cook on high for another 15-20 minutes or until sauce is heated through and cheese is melted. Enjoy!

RECIPE NOTES

*Look for an organic marinara sauce without added sugar or chemicals. The only ingredients should be tomatoes, onions and garlic, olive oil, and spices! (Our favorite sauce is Rao’s Homemade Marinara. Aldi also has an inexpensive, high-quality option: Aldi’s Simply Nature Organic Pasta Sauce.)

**For the best texture and quality, buy cheese in blocks or balls and grate it yourself. That way, you avoid any undesirable ingredients (e.g. cellulose) that are added to prevent the pre-grated cheese from sticking together in the bag.

**In the photo below, I used freshly grated Kerrygold Dubliner cheese (find it at Costco), which is a simple and delicious substitute if you haven’t gone to the store to buy the cheeses listed above.
